IRON COFFEE ROASTERY
Bringing out the sweetness with a long-awaited roaster
It all started in 2012. Yuki Isono was fascinated by the number of specialty shops that were popping up at the time, so he quit his job and jumped into the food and beverage industry, opening a stand in Gotokuji in 2016.
After researching roasting at a shared roaster, he purchased a roasting machine and opened a new shop in Chitose-Funabashi that doubles as a roastery. "We use a machine from Giessen in the Netherlands. Because it's a thick cast iron, the temperature is less affected by the outside air, which results in a more even finish."
Focusing on bringing out the sweetness of the beans, they mainly use a medium-light roast for drip coffee and a medium roast for espresso. They always have 6-8 varieties of beans in stock, sourced from multiple importers. Each one comes with a detailed description, including the farmer's profile.
