Enjoy old-style roasting and brewing in a modern setting
The name of the shop comes from the Japanese word "jotoku" which means "everyday" or "commonplace." True to its name, the roasting and brewing methods are old-fashioned and familiar to Japanese people.
"Direct-fire roasters, which are becoming less common these days, are suited to medium to dark roasts because the heat hits the coffee directly, making them more full-bodied. The extraction is done using a siphon, which works well with medium or higher roasts and also helps bring out the aroma," says manager Abe Satoshi. One of the reasons for the reliable flavor is that they choose processes that are specific to each country, such as natural for Brazil and Ethiopia, and washed for Guatemala.
"We don't offer extremely light roasts because we're always looking for the right level that won't shock our customers. Then we choose a roast that brings out the individuality of the beans."
