Guided by a barista, you can custom-roast your own green beans to your liking
OGAWA COFFEE LABORATORY is the flagship brand of Ogawa Coffee. The concept of their third store in Azabudai is "a bean salon where you can create your own original coffee, one of a kind in the world." They always have more than 10 types of green beans in stock, and can roast them on the spot, from light to dark roasts. You can even create your own blend.
"We will ask about the occasion, time of day, food and sweets to pair with the coffee, and then make a suggestion. The consultation can last up to 30 minutes," says store manager Takeshi Muramatsu. They also sell pre-roasted beans that have been carefully selected to achieve the mellowness that is unique to Ogawa Coffee, so you might want to try those first.
Roasted and raw beans are stored in the storehouse. 
There was also a limited top lot. On this day, "Nirvana" (10,800 yen for 100g) from Deborah Farm in Panama was in stock.
