A curry shop's gelato that controls aroma and spiciness in a sub-zero world
The reason why the popular curry restaurant Kalpasi started serving gelato at its second store is because "we want more people to know about our curry, not just curry lovers," says manager Keisuke Uchida. To broaden its reach, they chose gelato, which is loved by people of all ages and genders. Since they were going to do it, they used ingredients they were good at, and used spices in all eight types.
It goes well with sweets, and most of it can be used for ice cream, but the challenge is bringing out the aroma and kick in the sub-zero temperatures where steam doesn't rise. This is achieved by using ingenuity such as candied caramelization and roasting, while adjusting the intensity depending on the ingredients combined.
