A new world of flavorful milk and fruit ice cream combined with drinks
The space is painted in a greige color and finished with plaster from floor to ceiling. Alcohol bottles are lined up on the counter, and an ice cream display case is hidden in the back. "It's an ice cream shop," says the owner, Sumika Fujita, in a friendly manner, to customers who drop in wondering what kind of shop it is.
For her, who has worked in wine bars and catering, making ice cream is an extension of cooking. She started out making it as a dessert in a restaurant. "I loved the feeling of reflecting the aroma of ingredients on a white milk canvas," she said, and quickly became obsessed. Self-taught, she established her own ice cream and started Kasiki as a pop-up, opening a store in 2022.
"We want to make the most of the ingredients, so the base is just milk, cream, and sugar. We don't use any additives." By appropriately blending creams with different fat contents, the product is smooth even without the use of thickeners.
Because they're made in small batches, they don't need any preservatives. They mix in plenty of carefully prepared seasonal fruit into a base that's infused with the aroma of herbs and spices, bringing out the new appeal of the ingredients. They also offer plated desserts, such as cold fruit soup, expanding the possibilities of ice cream.
The enjoyment of seasonally fragrant ice cream can be further enhanced by pairing it with natural wine, single-origin coffee, or tea. While pairing ice cream with wine may seem odd, when you actually try it, the acidity and astringency of the wine brings out the flavor of the fruit and deepens its depth.
The reason why Fujita's ice cream pairs so well with wine is because it is infused with the aroma of spices and herbs and brings out the flavor of the fruit.
The coffee is brewed with beans from COFFEE COUNTY in Fukuoka, which the owner says "has a fruity flavor and beautiful aftertaste similar to our ice cream." The clear coffee does not interfere with the delicate aroma of the ice cream, but rather enhances its fruity flavor.
"When asked about pairings, I recommend something that has a similar scent to the ice cream. But rather than being too strict about what it has to be, it's best to let people choose freely and discover new flavors."
The casualness of the ice cream remains the same, but the pairing immerses you in a world that you can't reach with ice cream alone.
