Stylist Michio Hayashi talks about "Bars across Japan that you'll want to visit again and again"

This may be a bit sudden, but we'd like to ask you about your favorite local bar! We conducted an enthusiastic survey with Michio Hayashi, who loves alcohol, food, and bars. We asked him about memorable places and flavors he's encountered in towns outside of Tokyo that he would definitely like to visit again.

Fukuoka <Tsudoi>

The menu is super unique. You can eat original snacks and noodles named "That" or "That." I always order "That without Soup." It's a faithful reproduction of a certain cup of yakisoba, and it has an addictive flavor. The shop, quietly nestled in a residential area, is also charming.

Kyoto〈cave de K〉

This is the starting point for drinking in Kyoto. It's a must-see for champagne lovers, and it's great that you can order a magnum bottle by the glass. The desserts are also famous, and the chef's movements when making the rumored-to-be-exquisite crepe suzette are simply beautiful. I always enjoy watching them while drinking.

Kochi (Tanishi)

I often visit Kochi, where my brand's clients and friends live. I visit various bars each time, but this is always the last place I stop at. My standard is to start with a bowl of ochazuke (tea bowl) with sliced bonito, followed by a hot glass of Tsukasabotan, a local sake.

Tanishi's ochazuke (rice with tea). The piping hot soup stock and soy-marinated bonito fillets create a wonderful harmony. The aroma of sesame is also present.
