Roddick Chocolate quietly opened in July this year in a residential area of Sengoku, Bunkyo Ward, Tokyo. It is the long-awaited store of chocolatier Daisuke Yamauchi, who worked for 10 years at the atelier of Patrick Roger, a leading figure in the French chocolate industry, and even served as sous-chef.
The shop is set up like a gallery, with baked goods and other products displayed like works of art, but Chef Yamauchi's main focus is on the tablets and bonbons he makes from a variety of cocoa beans.
In order to bring out the natural aroma of the cocoa beans, Chef Yamauchi came up with the "All Couture Chocolate" method, which involves changing the processing of the cocoa beans for each product.
For example, all of the tablets are single-origin, but by blending two to four different types of the same cocoa beans with different roasting degrees, they are able to combine a fragrant roasted flavor with the delicate aroma that disappears during roasting. This is why they are filled with surprisingly fresh, fruity aromas such as melon, raspberry, and citrus!
The fruit bonbons are crafted in a three-dimensional way, using actual ingredients to recreate the unique characteristics of each tablet's cacao beans. For example, the banana-flavored "Ghana Diaso" combines banana juice with spices like cloves, vanilla, and cinnamon to create a mellow flavor, while the citrus-scented "Venezuela Chuao" combines lime and lemon juice with lemon balm, lemongrass, and peppermint to create a bright yellow-green citrus freshness. It's just like the process of making a cocktail or a dish.
It's also interesting to try combining tablets made from the same cocoa beans with bonbon chocolates and enjoy the "evolution" of their flavors.
