Introducing the first macarons from Echire!

Macarons from Échiré L'Atelier du Beurre

Échiré Butter is made in the village of Échiré in central-western France, a region known for its excellent dairy products, using the same methods that have been used since 1894. It has the rich aroma and creamy texture that only fermented butter can offer, as well as a light acidity similar to yogurt.

The only raw material used is milk from cows on dairy farms within a 50km radius of the workshop. Milk rich in dairy ingredients, squeezed from cows that have grazed healthy pastures, is fermented with lactic acid bacteria handed down through generations to produce cream, which is then kneaded in traditional wooden churns. Échiré Butter, born in this way, is one of the few butters in France to be certified AOP (Protected Designation of Origin), and is loved by top chefs and pastry chefs around the world.

There are currently eight specialty shops in Japan that offer original flavors made with generous amounts of Échiré butter. Among them, Échiré L'Atelier du Beurre, which opened in Azabudai Hills in the winter of 2023, has an atelier (workshop) inside the store, so you can get a glimpse of the work being done while purchasing freshly baked goods and viennoiserie.

This June, the shop introduced the first Echire macaron, the "Macaron au Beurre Echire." This new product was born from the creator's single-minded desire to let customers enjoy the deliciousness of butter cream, and the pure white batter, which is reminiscent of butter, is a fresh treat!

The butter cream sandwiched between the pure white pastry is fragrant, smooth, and free of any harsh taste. Its endlessly milky texture will leave you entranced.

There are four flavors: "Nature," which allows you to enjoy the pure, rich taste of butter cream; "Framboise," which bursts with the sweet and sour taste of homemade raspberry jam; "Pistachio," a nutty, rich cream with added pistachio paste; and "Truffle," an extremely rich flavor combined with black truffle.

"Nature," "Raspberry," and "Pistachio" can be packaged in a gift box, making them the perfect gift for butter lovers and sweets fans. The macarons must be refrigerated, and the cool, ice-cold buttercream melts in your mouth - it's a truly blissful experience!

This is a dish that could only be made by Butter Atelier, and will leave you feeling satisfied when you eat it.
