The combination of well-structured French cuisine and the joy of Western cuisine. The mastermind behind this unique restaurant is Chef Matsumoto Ippei, owner of the French restaurant Lapaix in Nihonbashi, Tokyo. He trained in Western cuisine in his youth and describes it as "his starting point," expressing the flavors of Western cuisine in a new way.
The menu features a lineup of familiar Western dishes. While the dishes may look simple, the flavors are unmistakably French, with the melt-in-your-mouth minced meat cutlet made with abba (offal) such as pig's trotters and ears, and the rich, classic sauce in the doria. The wine pairings are classic and sure to please, and the non-alcoholic options are also excellent.
The kitchen is run by Chef Shotaro Hirose, who trained in France for three years and served as sous chef at Lapaix. When you hear about his background, it's easy to see why the gastronomic techniques he employs down to the finest details, such as the acidity and aroma of the accompanying vegetables, are so effective. He is also eager to come up with new menu items. The restaurant is playful, highly satisfying, and surprisingly reasonably priced considering its location. You'll want to keep coming back.
