The striking name of the shop, Sarkara, comes from the Sanskrit word for "sugar." The lemon cake comes in a stylish triangular box (for five pieces) specifically for baked goods. 
The box opens like a blossoming flower, a design that box lovers will love. The lemon cakes look like eggs carefully protected in a bird's nest. A box of 5 is 2,400 yen. There are also boxes of 10 or 15 cakes in wooden boxes. There is also a box of 3 cakes available for purchase in stores only.

Sarkara, which opened in Sangenjaya in December 2024, has been generating a lot of buzz. The owner is Chef Hiroshi Oi, who worked as Chef Hironobu Tsujiguchi's right-hand man at two renowned shops, Mont Saint Clair and chocolate shop LE CHOCOLAT DE H. Even before opening a brick-and-mortar store, this talented pastry chef had been showcasing his baked goods at events and other events, earning him acclaim among sweets fans. This is the highly anticipated store for this talented pastry chef.
The store is lined with a dazzling array of baked goods, including madeleines, financiers, cakes, and sablés, but the signature item is, of course, the lemon cake.
Many popular patisseries now offer their own lemon cakes, and it's fun to compare them, but Chef Ooi's lemon cake is surprisingly juicy.
First of all, the dough melts in your mouth. It is kneaded with plenty of Setoda lemon confit, and the addition of coconut and ginger creates a miraculous texture that crumbles and disappears in your mouth.
The key to this is that the syrup, made by combining lemon juice with bergamot, elderflower, and honey, is thoroughly infused into the cake, giving it a juicy texture similar to that of a savarin!
To create a "pleasantly sour" syrup, they blend several lemons from different regions. This results in a mellow, tart taste and exceptional fragrance, without being too sour. Furthermore, the glass arrow that encases the juicy lemon cake also contains hints of lemon peel and brandy, adding an accent that goes beyond just sweetness.
