A "memorable" carrot cake from a luxury hotel
GM'S Carrot Cake from Janu Patisserie
Janu Tokyo is the first hotel under Janu, a sister brand of the Aman Group, and opened in Azabudai Hills in March 2024.
The "exquisite, light, and infinitely elegant" afternoon tea created by acclaimed pastry chef Yukie Noguchi has been extremely popular since the cafe first opened.
Another place where you can fully enjoy Chef Noguchi's creations is Janu Patisserie on the first floor of the hotel. The signature cake is the elegant "Tarny," which is shaped like a rose and was inspired by the fact that the rose is the flower of Minato Ward, where the hotel is located. And now, the new "GM'S Carrot Cake" is standing alongside the Tarny.
As the name "GM'S" suggests, this dish was created at the request of Janu Tokyo's general manager, Noriko Tanaka. Chef Noguchi spent about a year experimenting with the carrot cake to recreate the memory of the one General Manager Tanaka ate as a child.
"We use organic carrots, and the key is to grate them coarsely. Most carrot cakes are made in a simple pound cake shape, but we made this in the shape of a marigold, which is typical of Janu Patisserie," says Noguchi.
Indeed, the moist baked dough is accented by the texture of grated carrots, which still retain a moderate amount of fiber, and the sweetness of the carrots spreads throughout your mouth the more you chew it.
And the petals, which are carefully hand-squeezed one by one from the cream cheese frosting (cream) that is so familiar from carrot cake, are so delicate and pretty! The sweetness comes mainly from cane sugar, and combined with the refreshing tartness of the frosting, it leaves a light aftertaste.
