Gourmet: Learning from the past and creating something new: Akebonobashi's CLUTCH, a thoroughly American burger shop

CLUTCH (Akebonobashi)

A thoroughly American burger shop

Owner Ryoya Yoshimi's encounter with hamburgers was by chance.

He was invited by a senior colleague to join Burger Mania in Ebisu, where he discovered the appeal of gourmet burgers and eventually became the manager. He then helped launch the second branch of McLean-OLD BURGER STAND in Kuramae, and five years later opened his own restaurant.

He works diligently every day to create American hamburgers that follow the style of his original restaurant.

The patties are made from 100% domestic beef and prepared every morning using multiple cuts, and the buns, from Mineya, a popular purveyor to other restaurants, are grilled after the moisture has evaporated. The tomatoes are thinly sliced, and the lettuce is drained to make it crisp...the accumulation of careful work directly leads to the reliable flavor.

The peanut butter burger, popular in the US, is named "P-MAC" after his favorite former basketball player, Tracy McGrady, whose nickname is "T-MAC." The space is also filled with basketball, Dr Pepper, and BURGER KING merchandise, giving it a love for America.
