Equal, a patisserie that has remained bustling ever since it opened in a corner of Nishihara Shopping Street in Hatagaya in the fall of 2019. It is run by Goto Yuichi, the owner and pastry chef of the popular bistro PATH in Yoyogi Hachiman.
At first glance, the lineup of cheesecake, cream puffs, shortcake, and other treats may seem simple and familiar, like those you'd find at a local pastry shop, but once you try them, you'll be surprised by the sophisticated flavors. This is Chef Goto's approach, which freely utilizes the techniques of French and Japanese pastries, reconstructing traditional methods with a new perspective. The deliciousness that could be called a "new classic" is the reason for his popularity.
The French Cruller is also one of the signature items that has many repeat customers. It was first created in 2017 for PATH's weekly sweets project, and has been appearing at Equal for several years now.
This is the perfect item for Equal, which aims to be a Western-style pastry shop based in French confectionery and rooted in the local community where people can drop in casually.
When you take a bite, it makes a satisfying crisp sound, and the inside is soft and moist like cotton wool. As you chew it in ecstasy, the flavor of the egg spreads softly and eventually disappears like a song.
What a contrast between the simple, unadorned appearance and the delicate texture! The dough is barely sweet, so the balance with the sugar sprinkled on top is just right. Frying in rice oil enhances the flavor and leaves a clean aftertaste. That's why you'll find yourself wanting just one more.
