Ginza Bairin's original "fillet cutlet sandwich"

Ginza Bairin is a long-loved Ginza restaurant. It was founded in 1927 as the first tonkatsu specialty restaurant in Ginza. It has become a familiar sight to see people of all nationalities lining up at the Ginza Bairin Building on 7-chome.

The original owner, Nobukatsu Shibuya, created the flavor that is now known as "Umebayashi Tonkatsu" with his originality and inquisitiveness, such as by creating bite-sized cutlets, which are fillet cutlets that are easy to eat, and by utilizing his knowledge as a former pharmacist to create a special medium-thick sauce for tonkatsu, made with apples and onions to thicken it.In addition to the original sauce, the restaurant also uses carefully selected domestic pork, including Kagoshima's black pork, breadcrumbs that create a beautiful "sword-shaped" shape, and an original blend of oils based on cottonseed oil for frying.The restaurant's attention to detail and attention to detail have supported its unwavering popularity for nearly 100 years.

The original "fillet cutlet sandwich" has become synonymous with Ginza souvenirs. It first appeared in 1930. It was created in response to a customer request, and is still handmade to order at the Ginza main store.
