"Awayu" from Kayu Akanan
Kayu Akanan is located in the center of Tokushima City, on a quiet street overlooking the ruins of Tokushima Castle. The shop was founded in 1980 by the owner, Yoshio Nishikawa. The shop is highly popular for using local ingredients and making sweets with the utmost care by artisans. The clean, dignified calligraphy of the shop name on the noren curtain and the names of the sweets on the packaging are all written by the owner's hand.
Awayu is the signature confectionery of Kayu Akanan since its founding. The first thing that catches your eye is the beauty of the washi paper wrapping. This was also the owner's idea, inspired by the wrapping paper used to wrap kimonos.
When you gently open the wrapping, you'll find pure white rice cakes inside. Habutae flour is mixed with meringue made from whipped egg whites to create a dreamy, delicate dough. It's so incredibly soft and smooth to the touch, it's just like a baby's cheek.
Faintly visible through the white skin is the jade bean paste with a yuzu scent. The bean paste is made from Hokkaido azuki beans, each one peeled and painstakingly prepared, then dyed a beautiful jade green with gardenia and flavored with the peel of Yuzu Kitagawa, a specialty of Shikoku. A subtle saltiness is added with the secret ingredient of white miso.
When you bite into the incredibly soft dough, the rich aroma of Yuzu Kitagawa spreads across your mouth, along with the flavor of the bean paste, and the mellow saltiness of the white miso finishes off the taste. Both the rice cake and the bean paste melt in your mouth with an incredibly delicate texture...!
The elegant packaging, which opens like a traditional Japanese paper, is both elegant and easy to eat, making it easy to understand why it is loved as a sweet at tea ceremonies. It is a long-selling, elegant product that can be safely brought to celebrations and formal occasions.
