Founded in 1803, Kameya Yoshinaga is a long-established Japanese confectionery shop in Kyoto. For over 220 years since the time of the first owner, they have been making Kyoto sweets using the famous "Samegai Water" spring water that springs in front of the store. From traditional sweets such as "Karasubatama" to "Sliced Yokan" that resonates with the times, they have many "inventive menu items" that have been released into the world as many hits.
In 2016, when the eighth-generation owner fell ill, Yoshimura Wagashiten was born from Kameya Yoshinaga. The brand was launched by his wife, Yuiko Yoshimura who is in charge of planning and development, with the theme of "Kyoto sweets that are good for both the body and the mind."
The lineup includes Japanese sweets that can be enjoyed by people with diabetes or who need to limit their sugar intake without putting a strain on the body. They use ingredients that are rich in minerals and dietary fiber and as little refined as possible, and for sweetness, they use natural sweeteners with a low GI value, such as coconut sugar, maple syrup, sugar beet sugar, and palatinose, which have a gentle effect on the blood sugar level (GI value).
Their signature product, "Baked Houzui (Azuki Tea)," is a dried confectionery made by combining colorful ingredients with a batter made by adding coconut sugar and palatinose to the boiled azuki bean broth and whipping it. "Houzui" is a traditional semi-fresh confectionery made by whipping egg whites with sugar and solidifying it with agar, and this is a dry-baked version that does not contain any animal products or refined sugar.
The crispy and extremely light dough melts in your mouth, and the rich aroma and bittersweetness of matcha, the popping aroma of millet from organic germinated brown rice and grains, and the combination of sweet and sour strawberries and cocoa nibs in a "strawberry and cocoa bean" flavor are truly varied, just like a chocolatier would use ingredients!
