The original handmade monaka: Taneya's "Fukumi Tenpyo"
Taneya is a long-established confectionery shop founded in Omihachiman, Shiga Prefecture in 1872. With over 30 stores nationwide, the company still produces everything from fresh sweets to long-lasting gift sweets at its main factory in Eichigawa, Aisho Town, Shiga Prefecture, known for its excellent water. This is because the bean paste, the key ingredient in their sweets, is cooked in the high-quality groundwater of the Aichigawa River. This commitment results in consistent deliciousness, and the products are loved all over the country.
Fukumi Tenbin has been Taneya's signature confectionery since its release in 1983. The previous 9th generation owner felt that it was a shame that only artisans could taste freshly baked crispy monaka, and so he decided to develop it in order to share the deliciousness of freshly baked sweets.
The freshly baked monaka shell (skin) is made from Shiga Prefecture's famous glutinous rice variety, "Shiga Habutae Mochi," and is incredibly fragrant and rich in flavor. Inside the bean paste, made with adzuki beans sourced from contracted farmers in Hokkaido and cooked in renowned water, lies a hidden mochi (gyuhi), which is said to bring good fortune. This gyuhi is also made from "Shiga Habutae Mochi," and is plump and fine-grained.
The mochi filling and bean paste are individually wrapped and can be combined by the customer just before eating. This is the origin of the so-called "handmade mochi" that has become so familiar today.
