The Galapagos of Local Chinese Cuisine: The World of Hard Yakisoba
Katayaki soba reigns supreme among the most mysterious dishes on the menu of local Chinese restaurants. This dish is said to have originated in America, a faraway country, around 1900, and arrived in Japan as one of the so-called "American Chinese" dishes.
This dish, consisting of fried noodles covered in a veil of mixed vegetable sauce, has quietly survived in the corner of menus for over 100 years without any notable evolution. In this day and age when even food culture is being called upon to diversify, I sincerely hope that this dish deserves to be reevaluated.
