For Sumin, the answer is Seoul: FERMENTS, a vegan restaurant filled with sunlight and ambient sounds.

From art galleries to natural wines, music bars and independent bookstores, singer-songwriter and producer Sumin, who knows what's happening in Seoul right now, tells us about some of her favorite spots exclusively for BRUTUS.

Four years ago, I thought, "If I change my lifestyle, I might be able to create music that resonates with even more people," and when I completely changed my lifestyle to be an early riser, I came across FERMENTS.

This seat in front of the shelves lined with records, CDs, and books is my favorite. I enjoy the soft sunlight that pours in during the day, savor the effervescence of kombucha, and surrender myself to ambient music. For me, someone who creates songs based on lyrics, being in this space where wordless music plays is actually a source of creative inspiration.

All the food is vegan and health-conscious. They also have a commitment to sustainability, using high-quality vegetables that wouldn't normally enter the market simply because they don't meet standard specifications.

Yes, the charm of this restaurant lies in the coexistence of deliciousness and conviction. By the way, my favorite dishes are the garlic mushroom pizza with enoki mushrooms and the hummus made with fermented vegetables. And of course, when I come with friends in the evening, I drink plenty of natural wine (laughs).

Since I started living a morning-oriented lifestyle, I've noticed how the Han River changes its appearance throughout the day. This mighty river has also inspired me. It's especially beautiful in the morning and evening. It's rare to find such a wide river flowing through the center of a big city, so I recommend going to a park along the river to experience its grandeur.

〈FERMENTS〉
The seating on the first floor is spacious and has a high ceiling. There is also an open-air rooftop seating area on the second floor.
