Don't you get surprised when you go to a conveyor belt sushi restaurant with someone? Tokyo has too many options, from long-established establishments to new ones, and even if I research, all I find are trendy places with long lines, so I end up going to the same places as always. So, the best thing to do is ask people who are familiar with the city for recommendations in Tokyo.
