"I've tried top-ranked beans at coffee competitions in various countries, but honestly, the quality of Panama is overwhelming, so I decided to only serve Panama and opened this shop," says owner Yoshihito Nakano.
The shop is lined with top lots acquired through direct transactions with the farms. Some of them were purchased at the "Best of Panama" tasting competition. "If no one bids, we won't be able to drink this, so we want to provide that opportunity." Filter coffee, both hot and iced, is served in a wine glass.
His younger brother, Satoshi, drips the coffee in the store. "I want to control where on the tongue I drip the coffee and how much liquid I put into it, so I use different glasses depending on the beans." He pays close attention to detail to ensure that you can enjoy the finest beans.
