BLUEM COFFEE COUNTER
A vibrant blue machine extracts espresso with a rich body.
This cafe is run by Kazuya Shigeta, who worked at an Italian bar in Tokyo for about 10 years before going independent. The long counter and wood-themed interior are complemented by a blue La Marzocco coffee machine. The espresso they brew is a little different from other coffees.
"I aim for a rich cup of coffee that sticks to your tongue. For example, I use less water... the rest is a secret (laughs). I want you to really feel the lingering bitterness and sweetness." He uses just one type of bean. It's an original blend that achieves the ideal taste, and is roasted by a trusted roaster.
For lattes, espresso is added before or after adding milk, allowing you to enjoy the aroma until the very end. Furthermore, adjustments are made specifically for espresso alone to further enhance the aroma. This is an artisanal taste created by delicate techniques.
