Atsushi Sakao, one of the people who helped popularize specialty coffee in Japan, says, "Japan is now one of the world's leading coffee-producing countries, with everything from high-end shops to restaurant-style courses. But I prefer shops where you can quickly brew and drink, and we roast the beans lightly to allow their individuality to come through. This hasn't changed since we first opened."
The keyword for this authentic cafe-style shop is "recycling." The thinned wood for the counter was harvested by the shop owners themselves after receiving a lecture. They set up a compost pile, send it to farmers, and then buy more vegetables. "There are things we can do now that we've grown in size. There's so much we want to do."
We can't take our eyes off Sakao, who is still brewing coffee in the shop.
