This is where you can find special lots, born from our close ties with the farms.
Akiaki Uehara started out roasting his own coffee, then became an international coffee appraiser and qualified as an Arabica grader. He now travels to farms in Central and South America, Africa, and other countries.
"I've been there to see the whole process, from seeds and seedlings to harvesting. In Colombia, we even created a collaboration called 'Thermal Shock'. They control the temperature during fermentation to create a more fruity flavor."
As a result, there are always over 20 varieties on the counter. Half are coffees that can be enjoyed daily. The other half are collaborations, original lots, and coffees purchased at auction. The latter are made up of beans that have received 87 points or more in the Cup of Excellence tasting competitions held around the world. The fragrant coffees are best enjoyed in a wine glass.
