The owner personally visits the farms and independently investigates the water quality, soil, and working conditions. He selects only the best quality beans that he personally inspects. After undergoing rigorous quality inspections at an inspection agency, the beans are airlifted to Japan and stored in a temperature- and humidity-controlled environment.
Through such thorough quality control, they offer only clean beans that are free of residual pesticides and mycotoxins. The beans are generally lightly roasted. "We want our customers to experience the clean flavor directly," says roaster Takahiro Nishiguchi.
The recommended extraction method is the stainless steel filter of the Aeropress, which is said to produce a clearer taste.
