GRINDER

The first step is to grind to a uniform grain size

"The first step to making a delicious cup of coffee is to grind the beans to the same grain size." Ishitani says that if too much fine powder is mixed in, it will have an unpleasant taste, and if the grains are too large, the desired flavor will not come out. If you are using a hand grinder, he recommends a conical type, where the beans pass between a rotating conical blade and a fixed blade. Extraction equipment is evolving in a variety of ways

KETTLE

The amount of water and the temperature. How you pour it determines the flavor.

The key to brewing delicious coffee is to "adjust the exact amount of powder and hot water." "It depends on the beans, but the ideal ratio is roughly 14-15g of powder to 210-225g of hot water (powder:hot water = 1:15)." The spout of the kettle is also important. "Choose a kettle with a narrow spout, a gooseneck. By pouring in a thin line, the hot water will penetrate the powder evenly."

If you want to make delicious coffee, you want to pay attention to the smallest details. "Pay particular attention to the scale. When buying beans, check with the roastery to find out the recipe that's best for those beans and the amount of water to pour at one time, and make sure to measure it carefully.
