While many vegan ice creams are based on plant-based milk, EatKinda, a hot topic in ice cream powerhouse New Zealand, is using cauliflower. Jenni Matheson, one of the founders who came up with the recipe, experimented with other vegetables, such as pumpkin, before realizing that cauliflower, with its relatively neutral flavor and pleasant texture, was the best.
It is free of dairy products, soy, nuts, palm oil, genetically modified crops, and food additives, so it can be enjoyed by people with allergies and vegans. Incidentally, the cauliflower is non-standard and would otherwise be disposed of, and the containers are made from compostable materials, making it environmentally friendly.
