Individually run specialty shops are booming all over Japan. Locally-sourced ingredients directly contribute to the unique character of the ice cream. The backgrounds of the makers are as diverse as the ice creams themselves. Why do they make each type of ice cream? Here are the stories of the people who make them.

Gelateria 72

Making the most of Miyazaki's hidden treasures, the fruit kingdom, and its substandard crops

Shota Hiraga and his wife Akiko, who moved to Miyazaki from Sendai, opened the shop in 2021. They mainly accept non-standard fruits grown without or with reduced use of pesticides, and work closely with local producers, using pasteurized "Torontron Milk" from Ariman Dairy in Kawaminami Town, located in the central eastern part of the prefecture.

There are 7 to 9 different flavors available depending on the season. Five to six different sweetnesses are blended for each ingredient to bring out their natural flavor. The popular "Strawberry" uses "Oi C Berry" from a small farm in Miyazaki. It has a strong, rich sweetness, but a refreshing aftertaste, accented by the small seeds.
