Orby Restaurant (Kamiyacho)
A collaboration between a British interior design shop and a famous chef
Konno Makoto, who runs two thriving bistros, Uguisu in Sangenjaya and Organ in Nishi-Ogikubo, has taken on a new challenge: he has become the head chef of The Conran Shop, the first restaurant in Japan to be founded in the UK and now with locations in four countries.
Since going independent, he has always advocated "the opposite of mass" and "DIY restaurant construction," so it may seem surprising that he has changed his tune, but that is not the case. Even though the number of seats has doubled, the menu is determined by the ingredients of the day. He still cooks from scratch using fish he purchases himself at Toyosu Market, and meat and vegetables from long-standing producers and wholesalers.
Before opening, the restaurant visited the UK to inspect the restaurant, and the signature dish is a traditional beef dish refined with French techniques: baked venison wrapped in a pie. The attached bar also serves pub menu items.
The Konno brand's mainstay is its natural wines, with a diverse lineup ranging from New World to Japanese wines. Its location in a cutting-edge commercial facility may be a bit surprising, but the warm service maintains the craftsmanship and unique groove that Conran is known for.
