Learn about rum at Kichijoji's SCREW DRIVER. The "bridge" liquor is back in the spotlight

The emergence of a wide variety of spirits from discerning brewers has brought about a rich variety of cocktails based on them. We spoke to bartender Ayako Takahashi about the rums you should definitely try right now.

"Spiced rums, which have been popular on the Caribbean islands, are now popular mainly in Europe. Furthermore, with the global craft spirits boom, new brewers are increasing in number in Japan and other Asian countries."
That's what Ayako Takahashi, manager of Screwdriver, a long-established rum bar, says.

Like cachaça, it is made from sugarcane, but "there are no restrictions on where it is produced, and it is said to be produced on every continent except Antarctica." It has a wider variety of drinks, making it fun to choose from. Another appealing feature is its versatility as a cocktail base.

"Rum, due to the characteristics of the sugarcane used as an ingredient, brings together the ingredients in a rounded way. While enjoying a long-aged rum on the rocks is one thing, I also hope people will enjoy it in a cocktail, savoring the unique characteristics of the ingredients combined with it along with its sweet flavor."

Tokyo's SCREW DRIVER interior and rum
(1) Pusser's British Navy Rum. Based on a blend of rums once distributed to the British Navy. It has a heavy, full-bodied taste.
(2) "Ielabo Getto": A domestic spiced rum distilled with Okinawan shell ginger leaves. Complex aroma.
(3) "Bacardi Gold." Aged for two to three years in oak barrels. Adds a richer flavor to cocktails.
(4) "Clairan Sonson." A sugarcane distilled liquor that was kept secret in Haiti for a long time. Its fruity and fragrant taste is addictive.
